Some people may not realize that Tabasco sauce gets its name from the type of pepper used to make it. Tabasco is a type of bird pepper from Tabasco, Mexico. Tabasco ranges form about 30,000 to 50,000 Scoville heat units, which is about 10% as hot as a habanero. Tabascos are easy to dry and make a good dried pepper that is significantly hotter than cayenne or commercial flaked pepper for those who prefer something with a bit more kick but still good for everyday use. You can also soak them in vinegar or use them to make hot sauce. Tabasco plants will grow as perennials in warmer climates. Tabasco plants can handle minor short-term freezes, especially if the base is mulched well. Plants will then continue to produce a constant supply of tabasco peppers throughout the growing season. For those who prefer to use them fresh, they are available much if the year. Where it never freezes, they should be available all the time. Even a few plants should provide enough peppers for your family with some to give away.
